This dish was my second vegetarian meal and my family loved it!! I took the other reviewers advice and doubled the onion, garlic, gingerroot and curry and it was fantastic!! I didnt have fire roasted tomatoes on hand so I used diced tom's with roasted garlic instead. will be making this again for sure!!

I made a double batch of the recipe and it came out great. Served over basmati rice with warm garlic pita bread. Whole family enjoyed. Used slightly less than double the onions and slightly more than double of the ginger and the curry powder. I used the McCormick Hot Madras curry powder. Not sure how much it differs from the regular Curry powder in terms of spice. I may add a small bit of cayenne next time to add a bit more kick.

Since everyone was saying this recipe needed more curry, I made sure to use the spice lavishly and it turned out wonderfully, thank you for the excellent advise! I also kicked up the amount of garlic a few notches as well. I didn't have cilantro on hand so I used lime juice as a substitute; with the sauce being thick in consistency, adding another liquid didn't hurt it at all. Although I had plain yogurt on hand, I had some sour cream that needed to be used up so I used that instead. It worked out well. This recipe is a definite keeper!

Boyfriend loved it. It was good but could use more curry powder. Had it over rice, with plain yogurt.

Very easy to make, great flavor; made it for my bunco group, not much leftovers, and the recipe was requested. Definitely will make again, the roasted tomatoes add a nice flavor.
