This was a fantastic recipe. I made the lentil patties on their own and served with another side and they were still amazing. I was very generous with the cashews and added extra breadcrumbs to form a nice consistency for the patties before cooking. The last time I made these, I also added some grated carrots - my two toddlers devoured them!

I thought this was good and I will probably make it again. I used a teriyaki type stir fry sauce. As far as what I would change, I would make sure to have more warm stir-fry sauce on the side, to pour over the patties and possibly the noodles (however much an individual prefers). The patties were good, but some might like more of the sauce. I would also add more carrots and perhaps a little more celery. These don't come in until Step #4, but I found myself wanting more carrots and celery to kind of pour over the patties and the noodles. Instead of using an actual egg, I used egg beaters and that worked well. Overall, this is a good vegetarian-type meal. These patties would also work well with just a side of mixed vegetables.
