This soup IS delicious! Like others, I tossed in a 4 oz can of diced green chiles, a 19 oz can of enchilada sauce, and a package of "Mexican" corn. Excellent!

This soup is absolutely delicious! It was super quick and easy to make. The only alteration I made was I used a 19oz can of enchilada sauce, which was actually the perfect amount. I will definitely be making this over and over again. The whole family loved it!

This soup came out wonderful. It was quick and easy to put together and everyone loved it. Even my picky eater went back for seconds. We added some black beans the second time we made it.

I was excited to make this soup. I have tried this "flavor" at restaurants and have enjoyed it. I only had one can of cream of chicken soup on hand so I used a can of cream of potato too - this added a nice texture though. I also added a can of fiesta corn - which with the potato soup - made this more like a chowder. The best part is my children love it and even took some leftovers for lunch the next day. The has become a fast family favorite.

This soup was very easy and good. My husband loved it and he is usually not really fond of soups. My only complaint is that it wasnt spicy enough. I think I may add another can of enchilada sauce next time I make it.

This was very easy and quite filling. I did add extra chicken,a can of corn and a can of black beans(both drained, beans rinsed). I also kicked it up with some pepper. Very good and my family really enjoyed it. I loved the quick clean up. Served it with a loaf of warm crusty bread.

I was very excited about trying this recipe. I added fresh corn and some green chiles, however this soup tasted very much like a canned soup. I don't know if it was the canned enchilada sauce I used, but it did not taste fresh or homemade. I will not make this again, it was a BIG disappointment.

This was a super easy and filling meal. I made it with leftover baked chicken instead of the chicken strips and it was still delicious. I cut strips out of flour tortillas, sprayed with cooking spray and toasted in the oven instead of tortilla chips. We all *loved* this soup and it will be a regular addition to our menu!

This soup was so easy to make. I used a rotisserie chicken and shredded it in place of the southwest style chicken the recipe called for. It really turned out well. I made quesadillas to serve along with the soup. It made a nice 'soup and sammie' combo. We topped it with baked tortilla chips and I also had reduced-fat sour cream on the side as well. We will definitely be making this soup again!

Very good. I used Velveeta instead since I had extra on hand. I also used mexican shredded chicken since I could not find the southwestern chicken at the store. Still tasted great! Also, I added a can of mexi corn and it added a subtle sweetness at the end of bit! Will be making again!

I have made this soup several times now. It reminds me of Chili's soup, but with an extra bite to it. I'm definitely going to make this many more times!!!!!

Wow!! Just like McAlister's soup. I tried it because of a comment about McAlister's that another poster mentioned!! It was really good and I loved how easy it was to make. The whole family loved it. Next time, I'm going to try it with the regular Cream of Chicken. I added salt to the pot before I served it.

This was very good! I added 1 garlic clove, onions, celery, green pepper, and jalapeno pepper for a little flavor and spice. My husband loved it. Will make again!

Very good! i used regular chicken and half a pack or less of taco seasoning and black beans. Next time i am going to add corn also. my boyfriend doesnt like southwestern or mexican food but he likes this soup.

I have been trying to duplicate Max and Erma's soup also and this is as close as I have come. I used hot enchilada sauce because we like things spicey. Next time I will chop up some jalepeno pepper also. Nice with a little extra cheese sprinkled on the bowls.

I absolutely love this soup. I have given the recipe to all of my family members. If you like the Chicken enchilada soup at McAlister's Deli, you will love this too! (I think it's better) We have adjusted the heat in the soup by changing the enchilada sauce from mild to medium to hot.
