I was talking with a friend at work and asked what she was making for dinner (I needed some new ideas). She said she was going to make a quiche for dinner. I'd never made a quiche let alone thought of having one for dinner, so I went online and found this recipe. I have to say for my very FIRST quiche EVER it came out really well and my husband LOVED it!! I loved it too! I brought a piece to work to share with a the friend that suggested quiche and another friend and they both loved it and I have shared this receipe with them! I'll definitely be making this recipe again and again and again!

I signed up to help make food for an small outdoor wedding & reception for two members of our church's wedding. Their favorite food is Mexican. I found this recipe, kept my fingers crossed since it was never tried by me before, made 6 quiches the day of the wedding and reception, and off we went! EVERYONE LOVED the quiche. I made another quiche just for my husband and me, and am about to share the recipe with my sister. I'll make this again for sure!

This is such a great recipe. It's easy to make and there are so many variations you can use. We top this with sour cream (or crema), salsa, and jalapenos for the ones who want it spicy. Everyone in the house loves this quiche, from our 4 yr old grandson to all the adults. It's a keeper for sure.

This reciepe is great! Next time, I am going to add a little taco sauce to the filling but even my somewhat picky husband liked this recipe!

Perfect for a quick dinner. Easy to fix. Served with a green salad and sliced avocado.

I've got to try this for myself (my husband 'do' chicken, eggs, and all the good food). I probably won't use the salsa, but sour cream instead.Thanks.

Didn't think a whole lot about it while putting together but after I was finished and put it in the pie pan, I had my doubts about it. Husband was pleased with it and said I could make it again. Kids are another thing altogether!

I use leftover chicken breasts in this recipe and it so very good. Even my picky eaters will take seconds of this. I make it for potlucks too. Everyone thinks I spend hours when it's really very simple and easy. Of course I do not share this fact I just sit back and let the complements keep coming.

The first time I made this was for a book club meeting - I also made a couple of other quiches - and I didn't even get to try it because it was so popular. It is a hit everytime. Although - I like it better with just 2 cups of cheese total. I made one last night and traded the green chiles for jalapenos and it was so yummy!

Very easy to prepare - I used blue tortilla chips and would reccomend mixing ENCHELADA sauce (which gives them that flavor) with a VERY chunky salsa - Yummy

My family raves about this dish every time I serve it. To make this a more "heart-healthy" meal, I use an egg substitute product, skim milk and low-fat cheeses. It takes about 10 minutes longer to cook, but it's worth the wait!

I just love this recipe! Having had weight loss surgery, I can not eat traditional tortillas and so I thought I had to give up many mexican dishes. However, since this uses chips (which I can eat), this recipe enables me to enjoy the taste of enchiladas without having to worry about tortillas! And it is always a huge hit when I take it to potlucks and share with other people! This definitely gets an A+!

What a tasty lite meal! My husband loved it! I changed up the ingredients a little bit and added onion, green pepper, and tabasco. This Quiche was awesome - and the leftovers for breakfast the next morning were even better!

i had a taste for mexican food today, and i wanted it to be different and fast and easy. this recipe hit the spot in all areas and more. my 14 yr old son absolutely loved it! he had one huge slice and then another. i thought the kid was going to burst! my husband enjoyed it as well. i even made a bowl of guacamole for us to munch on while the quiche was cooking. we even enjoyed it along with the quiche. i made a point to log onto my computer, just so i could add my comments about this tasty dish. i'll be sharing a few wedges with my mom as well! THANKS!

This is such a HUGE hit with everyone! My family and friends absolutely love this recipe! I love it because I have a special diet and can not have bread or tortillas and need to get in a high amount of protein. This recipe definitely takes care of that for me! I can now eat enchiladas and not have to worry about the tortilla!
