I just made this salad for a 4th of July picnic today. It is so yummy! I will definitely make this again! I added a thin sliced red pepper as well for extra crunch. So easy and delicious!

Swiffermom, I would just eliminate the sugar all together. My Oma use to make a dressing just like this and depending on the meal would either put in the sugar or leave it out. You could also use a sugar substitute such as Agave Nectar or Stevia.

I have a question about the dressing. Has anyone come up with a different dressing to add to this salad? I'm borderline type 2 and don't want to use sugar that it is calls for in the dressing. I tend not to like sweet sauces anyway. Any suggestions on a more savory type of dressing that would go well with this salad?

What I do with the ramen noddles is, toast them in a fry pan with a smidge of sesame oil until golden brown. They taste great, have a great crunch and don't taste raw or to crunchy.

Macaroonie, i don't think you are supposed to cook the noodles. you did it right!! the noodles add CRUNCH!

I am not a good cook, so please don't laugh at me. I made this recipe, but I forgot to cook the noodles, it was not mentioned in the recipe. Please be very specific with instructions. It's ok you can laugh now, I tried it again and it was delicious. Will be making again. LOL

I put in carrots instead of the corn and sunflower seeds instead of the peanuts (only because I didn't have the other two on hand) and my family loved it! My husband polished it off and wanted more.
