I love this side dish! It's a wonderful, low-carb alternative to scalloped potatoes. Delish!

This recipe was great! It's a good portion for 2 people, with a little bit left over. I used french fried onion rings on top instead of the crackers and it was excellent. A great recipe when you want a "spruced up" veggie side dish. I will definitely keep this in my recipe box.

THIS DISH WAS EXCELLENT! MY HUSBAND RAVED ABOUT IT. IT TASTES LIKE A POT PIE WITHOUT THE CRUST.

I made half the recipe, it was great for one with leftovers or two side dishes. I swapped the swiss for cheddar and the crackers for pasta to make it a pasta bake type dish. Altogether very yummy and quick, didn't put it in the oven.

Great Recipe! However it did not make enough, I plan on doubling the recipe next time.

My husband loved it as much as I did. I ate it as a main course but he had as a side dish and even ate seconds. (not normally done)
