Rattlesnake
Cornmeal
flour
salt
pepper
eggs
milk
oil

Directions

  • 1 Skin the snake by cutting through the skin and peeling it back until you have completely skinned the snake. Cut the snake into 3 to 4 inch pieces.
  • 2 Roll the snake cuts into a mixture of cormeal and flour, seasoned with salt and pepper to taste.
  • 3 Dip the pieces into a mixture of egg and milk.
  • 4 Dredge in cornmeal mixture again.
  • 5 Saute in hot oil until browned on all sides, then serve!
