Raspberry-White Chocolate Muffins

Raspberries and white chocolate create a favorite flavor combination in these extra-special (but surprisingly easy-to-make) muffins. Try them for breakfast or as a snack.

cup milk

cup white baking chips

cup raspberries

Directions

  • 1 Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups, or place paper baking cup in each muffin cup.
  • 2 Beat egg slightly in medium bowl. Stir in remaining ingredients except raspberries just until moistened. Gently stir in raspberries. Divide batter evenly among cups.
  • 3 Bake 15 to 18 minutes or until golden brown. Cool 5 minutes; remove from pan.

I tried 1 cup of honey crisp red apples peeled and diced and also a tablespoon of cinnamon and they were absolutely amazing!!

I have made these on several different occasions and they turned out perfectly and I always get asked for the recipe. I do freeze my raspberries before mixing them so they don't get mushy. I am making them again tonight to take to work in the morning.... Very easy and Delicious muffins!

I am so mad about these. I have wanted to make these since I found them and finally did today. I was so excited about these but they didn't rise any, weren't very sweet, and were tough. I didn't over-mix the batter and they were still tough. I even sprinkled them with sugar and they still weren't sweet. These turned out awful!!!!! Never again.
