Poppy Seed Dressing
cup mayonnaise or salad dressing
tablespoon poppy seed
tablespoons white vinegar
bag (10 oz) heart of romaine salad mix (about 10 cups)
cups fresh raspberries
kiwifruit, peeled, sliced and cut in half
red onion, thinly sliced
In small bowl, beat all dressing ingredients with wire whisk.
In large bowl, toss all salad ingredients. Pour dressing over salad; toss. Serve immediately.
Pressed for time? Skip the scratch dressing, and toss the salad with your favorite bottled poppy seed dressing.
Reduce the fat and calories in this salad by using reduced-fat mayonnaise.
Cut up the kiwifruit and onion ahead, package separately and refrigerate until serving time. Make the dressing, cover and refrigerate. Whisk before tossing with the salad.
