Wonderful-- SO ridiculously easy-- Here's a great variation-- add a bit of cinnamon & nutmeg to the dry ingredients and use Apple Butter for your filling. Make it fancy by melting a bit of cinnamon, white chocolate or butterscotch chips in a small zipper bag- snip the end and drizzle over top!

My family absolutely loves these - my husband, in particular, regularly asks for me to make them. Although we like them with raspberry jam, we actually prefer them with apricot jam. And I like to add a little shredded coconut and ground almonds to the mix, which adds perfectly to the flavors.
