Ingredients

box Betty Crocker® Suddenly Salad® classic pasta salad mix
1/2
cup ranch dressing
1
tablespoon fresh lemon juice
2
cups baby spinach leaves or small broccoli florets
3/4
cup grape tomatoes, halved
1/2
cup sliced cucumber, halved
1/2
cup julienne (matchstick-cut) carrots
2
tablespoons chopped fresh or 1 teaspoon dried basil leaves

Directions

  • 1 Empty contents of pasta mix (from Suddenly Salad box) into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • 2 Drain pasta; rinse with cold water. Shake to drain well.
  • 3 In medium bowl, stir contents of seasoning mix (from Suddenly Salad box), the dressing and lemon juice until blended. Stir in pasta and remaining ingredients. Cover; refrigerate until ready to serve. Store any remaining salad covered in the refrigerator.

I left out the lemon juice and basil and substitued the carrots for snap peas and it was so so very good I highly reccomend this!

This salad was very sour.....neither my husband nor I ate more then a few bites...then we tossed it in the trash. I didn't even use the whole amount of lemon juice as I thought that would make it sour. The ranch dressing tasted fine so it would have to be something in the seasoning packet in the Suddenly Salad that made it taste so bad.

Excellent! Very light refreshing cool salad. I used slightly less ranch to start because i didn't want it too creamy and it was perfect (you can always add more ranch after if not enough but you can't take away). Good tip in previous reviews about spinach. I waited to add spinach until right before serving to prevent it from getting too soggy and it came out great. Thanks!
