Made this today using pineapple juice instead of milk/water and brown sugar instead of granulated. My mistake, I used chunck pineapple instead of crushed or sliced. It fell apart when I flipped it over. Still takes good and was very moist. I will try thisone again!

my mother used to make this in an iron skillet, she would slightly cook the butter and brown sugar until it was almost stringy, placed pineapple then cake mixture and baked. When baking was complete the top was a little crunchy, was delis. I cannot seem to replicate.

This was very good. Loved it! It was easy to make. I made it for breakfast today (it's the 4th of July - so spoiled the family a little). It was gone in one sitting! Will be making this again.

Your recipe sounds delicious instead of the way I currently make Pineapple Upside-Down cake. Because of cholesterol problems, I replace the butter with fat-free non stick cooking spray and pat the brown sugar on it. It works just as well without all the calories and fat. Using bananas seems interesting, I will give it a try.

This recipe has completely changed the way I make Pineapple upside down cake. there's even room to play with it. I did find that it comes out better with just a half a teaspoon baking powder added.

Great recipe! I tweaked it a bit by using fresh pineapple that I chopped coursely and added some dried cherries instead of the maraschino cherries. It came out perfectly and only took about 15 minutes of prep time. This one is a keeper!
