Ingredients

box (4.7 oz) Betty Crocker® scalloped potatoes
2 1/2
cups hot water
1
cup chopped cauliflower
1/8
teaspoon ground mustard
1/8
teaspoon pepper
1
can (10 1/2 ounces) condensed chicken broth
1
cup cubed fully cooked ham
1
cup half-and-half
Chopped fresh parsley, if desired

Directions

  • 1 Stir Sauce Mix, hot water, cauliflower, mustard, pepper, broth and Potatoes in 3-quart saucepan. Heat just to boiling, stirring occasionally.
  • 2 Reduce heat; cover and simmer about 25 minutes, stirring frequently, until potatoes are tender.
  • 3 Stir in ham and half-and-half. Cook uncovered about 5 minutes or just until hot (do not boil). Garnish with parsley.

I've made this soup a few times already, we love it! I make this when I happen to have left over ham from the holidays, this time I'm going to try thickening the soup, because it is a bit watery.

Big disappointment. Yes it was quick and easy but it lacked flavor and I can't put my finger on what it needed. Maybe a different cream base with actual potatoes instead of boxed?
