On cool days, what could be better than this robust soup that boasts of potatoes, cauliflower and ham?

I've made this soup a few times already, we love it! I make this when I happen to have left over ham from the holidays, this time I'm going to try thickening the soup, because it is a bit watery.

Big disappointment. Yes it was quick and easy but it lacked flavor and I can't put my finger on what it needed. Maybe a different cream base with actual potatoes instead of boxed?

I googled and found many substitutions, but the one I used was "1 tablespoon melted butter, plus enough milk to equal a cup." Perfect! This will be made again, even if I don't have left-over ham. Kudos to the person who came up with this recipe!

Excellent...I used turkey ham and dijon mustard (instead of dry), and cooked just the ham, seasoning packet from the potatoes, and broth in the crockpot on low for about 3 hours. I added potatoes and cauliflower and cooked for about another hour, then added half and half. Cauliflower was "al dente" and not mushy. Served wih cornbread. FABULOUS!!

This was beyond easy and sooooo good and filling, just the soup to make when you have leftover ham. The flavors are so spot on, loved the tang of the mustard, the kick of my freshly ground white and black peppercorns, the nuttiness of the cauliflower with the velvety potatoes and the smooth rich soup made from the scalloped potato sauce, chicken broth and half & half. This will be a new cold weather favorite whenever I make a big ham! Great recipe!

Oh my goodness!!! This is really good. I didn't have fresh cauliflower so I used frozen California blend vegetables. I doubled the recipe due to a large crowd. Wonderful. I have a great beer bread recipe and it went really well with this...3 cups self rising flour, 1/2 cup sugar, 1-12 oz. beer. Mix together, put in greased bread pan. Melt 1 stick butter pour over dough. Bake 40 min @ 375, cover with foil and cook another 15 min. for a total of 55 min. Yum!!!

Excellent, I made with some smoked pork chops I had on hand. I was easy and very tasty. I also made it again with ham and added some sharp cheese on top when serving. great. I think it would be could also with some keibasa.
