Ingredients

1 1/2: cups Country® Corn Flakes cereal, crushed (1/2 cup)

1/2: cup Original Bisquick® mix

3/4: teaspoon paprika

1/4: teaspoon salt

1/4: teaspoon pepper

1: pound boneless skinless chicken breast, cut into 1-inch pieces

1: tablespoon vegetable oil

Directions

1 Mix all ingredients except chicken and oil in 2-quart resealable plastic bag. Mix chicken and oil.
2 Shake about 6 chicken pieces at a time in bag until coated. Shake off any extra crumbs. Place chicken pieces in single layer on microwavable rack in microwavable dish.
3 Cover with waxed paper. Microwave on High 3 minutes. Turn dish 1/2 turn. Microwave 4 to 5 minutes longer or until chicken is no longer pink in center.

Enjoy these tender chicken chunks with barbecue sauce, or make honey-mustard sauce by mixing equal amounts of honey and your favorite mustard.

Kids will love it if you serve these tender chicken pieces with a variety of dipping sauces. Honey mustard, ketchup and barbecue sauce are three of many possibilities.

You may find that using kitchen scissors makes cutting the chicken easier.

Save the steam for the sauna! Carefully remove the dish from the microwave and lift the edge of waxed paper farthest away from you to let the steam out, then remove the waxed paper.

OH NO! I thought this would be a great recipe for our cooking class with my high school Special Education students. We had to leave the bisquick out for one student due to food allergies. In the "first" three minute microwave time the chicken burned crispy black and filled the microwave with smoke. I had to explain to our Assistant Principal and maintenance staff what happened and that I was not burning the school down. The smokey smell permeated the entire downstairs of the school. I have learned a great deal from this experience!! I actually would give this a negative one but there is no option for that!

I was skeptical when I first tried this because I usually don't have luck using the microwave for making anything crispy. I really was shocked how crispy and tasty the chicken was. My daughter really liked them too and has asked me to make them again....that's when I know the recipe is a keeper.
