Quick Black Bean Soup

Ingredients

  • 1 teaspoon oil
  • 1/2 cup chopped green bell pepper
  • 1/4 cup finely chopped onion
  • 1 cup finely chopped cooked ham
  • 2 (15.5-oz.) cans refried black beans with lime juice
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon chili powder
  • 1 1/2 cups water
  • 2 tablespoons sour cream
  • 2 tablespoons chopped fresh cilantro, if desired

    Heat oil in 3-quart saucepan over medium heat until hot. Add bell pepper and onion; cook and stir 2 to 3 minutes or until crisp-tender.

    Add all remaining ingredients except sour cream and cilantro; mix well. Cook over medium heat for about 5 minutes or until thoroughly heated, stirring frequently. Top individual servings with a dollop of sour cream. Sprinkle with cilantro.

  • Black beans are often used for soup, but they're usually soaked overnight and simmered all day with a ham hock. This recipe, prepared with refried black beans, dramatically cuts your prep and cooking time.
  • If you can't find cans of refried black beans, either plain or seasoned with lime juice, drain and rinse 2 cans of black beans then mash them with a potato masher. Season the mashed beans with 1 teaspoon of lime juice.
  • Omit the ham and garnish each serving with 2 tablespoons crumbled cooked bacon.
