box Betty Crocker® pound cake mix
1
cup mashed cooked sweet potatoes
1/2
cup milk
1
teaspoon ground nutmeg
3
eggs
1
tub Betty Crocker® Rich & Creamy cream cheese frosting

Directions

  • 1 Heat oven to 350°F. Grease 10-inch angel food (tube) cake pan with shortening; lightly flour.
  • 2 In large bowl, beat cake mix, sweet potatoes, milk, nutmeg and eggs with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed 3 minutes, scraping bowl occasionally. Spread in pan.
  • 3 Bake 45 to 50 minutes or until toothpick inserted in center comes out clean and cake is golden brown. Cool 10 minutes; remove from pan to wire rack. Cool completely, about 1 hour. Frost cake with frosting.

I didn't have the pound cake mix so I made Flo Breaker's Pound Cake from the Joy of Cooking; and I used leftover candied sweet potatoes instead of plain puree. I subtracted 1 egg and 1/3 of a cup of sugar to compensate for the sweetened potatoes. This cake is amazing; very subtly scented and flavored and the cream cheese frosting is, pardon the expression, the "icing on the cake". Incredible flavor; worth every second of work.

Family loved it and friends too. I added a bit of sugar though to the batter though. I love sweet potatoe pumpkin pie my mom makes every thanksgiving. im going to add the same dose in pumpkin too. Its going to taste great..will leave a post when i do:)..

I didnt like this cake it was still to light and a little dry. Will not make again I tried it twice.
