Quite literally the most delicious pumpkin dessert I've ever had. Each layer turned out perfectly and when topped with a little whipped cream these bars were to die for!

Loved this! I didn't use the pecans, and I couldn't find whipping cream, so I tried Cool Whip as a substitute, and it came out great! I also left off the chocolate topping, but still added the caramel. Overall, an excellent, rich autumn dessert that your guests will come back for seconds for!

I wasn't able to get the oatmeal cookie mix (missed the opportunity to pick it up) so I had an idea... I've made cheesecake bars with gingerbread base before and the result was AMAZING. So I searched for a gingersnap shortbread recipe (can I say this here? www.recipe.com has the recipe I used for this). I used this as the base, reserving 1 cup of the mixture as directed, for the topping. I did the filling as directed, and would have used the topping drizzles if I had had them on hand. An excellent alternative if you don't have the oatmeal cookie mix on hand!

these are very very good!!! I had to make them on a friday morning for a bbq saturday evening and they were still crispy! I didn't add the chocolate or caramel sauce. But next time i might sprinkle pieces of Heath Bars on top!

First of all let me start by saying that I bake all the time and I’m incredibly critical of the final product, but these are AMAZING. I made two batches of these this year and one last year. This year, I added a little more pumpkin then the recipe called for, and the bars were mushier then last year. This year, I used one ceramic dish and one metal dish. The bars baked in the metal dish popped right out and were perfect. The bars made in the ceramic dish stuck to the bottom and the cheesecake came apart from the base. Overall, every time I take a bite of these, I think of how amazing they are. I don’t add the chocolate to the top because the oatmeal, pumpkin, caramel combination is so out of this world already, and I don’t do the nuts either. It was the first dessert gone out of about 20 from the company potluck this year! One more thing, let them cool before putting them in the fridge, the top of mine became slightly mushy because they weren’t cooled. Enjoy!

This dessert is one of the best I've ever tasted. I cook it for Thanksgiving every year and everyone loves it. My husband still remembers them for every Thanksgiving and asks me if I'm making them again.

Great recipe! Everyone loved them. The ginger snaps in the crust are a really nice touch. I agree that the drizzles are over kill. I also cut the pumpkin pie spice in the filling down to 1/2 tbsp. This is plenty with the spice in the crust from the ginger snaps. Really nice texture. I did the whole thing in the food processor.
