The only reason I am giving the recipe a 3 spoon score is because I was hoping the cookie would have a little more "pumpkin" flavor. I used chocolate chips instead of raisins and the cookie tasted very yummy. The kids love them! I was surprised that the next day the cookie definitely had a little more flavor.

This recipe is easy to fix, no mixer needed. So I can still make these during a power outage. The recipe tastes great! My only problem is that I make the cookies too big and I don't get 4 dozen out of it. The first dozen were way too big and the rest were reasonable but still a little too big. Will see how these look tomorrow. I would like to be able to ship a batch to each of my girls away at college.
