Ingredients

tablespoons butter or margarine

eggs
1/2
cup Gold Medal® all-purpose flour
1/2
cup milk
1/4
teaspoon salt
2
cups assorted fresh berries
Powdered sugar, if desired

Directions

  • 1 Heat oven to 400°F. In 9-inch glass pie plate, melt butter in oven; brush butter over bottom and side of pie plate.
  • 2 In medium bowl, beat eggs slightly with wire whisk or hand beater. Beat in flour, milk and salt just until mixed (do not overbeat). Pour into pie plate.
  • 3 Bake 25 to 30 minutes or until puffy and deep golden brown. Serve pancake immediately topped with berries. Sprinkle with powdered sugar.

Love this recipe, printed a copy March 24, 2009 and make it still on a regular basis always multiply the recipe by four. I add peeled and cut pears and/or apples to the batter once poured into pans and let it bake all together and serve with real maple syrup. Because I add the fruit to the pan, I've added 1 T baking powder to my quad batch to give it a little lifting power and recently found baking it in a 9 x 13 pan, invert cut pieces onto a plate works wonderfully too.

make this all the time for dinner. It is my kids favorite dinner. I prefer to use a cast iron. I put them butter in the pan and put the pan in the oven. the Key is to get the pan HOT before pouring in the mixture.
