I have a quick and easy recipe similar to this. I scramble 4 eggs and add them to warmed up salsa (I also add a little water if the salsa is too thick) cover and simmer for a few minutes. I also add extra hot chili sauce. Goes perfect with plain fried potatoes. The leftovers are good too. Makes two meals for me.

I think this would make a great base for a buffy chile relleno. Instead of pouring all of the batter into the pan, just put half, and then a layer of green chilies and jack cheese before topping with the remaining batter.
