cup shredded Swiss cheese (4 oz)

lb cubed cooked ham (about 3 cups)

package (2.1 oz) precooked bacon, chopped
2
cups shredded Cheddar cheese (8 oz)
1/4
teaspoon salt
1/4
teaspoon ground mustard
Dash ground nutmeg
  • 1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Place butter in dish; place in oven until melted, about 10 minutes.
  • 2 In medium bowl, mix Bisquick mix, 1 cup of the milk and 2 of the eggs with whisk until tiny lumps remain. Pour over butter in baking dish. Layer with Swiss cheese, ham, bacon and Cheddar cheese. In large bowl, mix remaining 1 cup milk, remaining 6 eggs, the salt, mustard and nutmeg. Pour over casserole.
  • 3 Bake uncovered 35 to 40 minutes or until golden brown. Let stand 10 minutes before serving.

    I fixed this dish for supper, and it turned out really well--it browned beautifully, and the aroma while it was baking was amazing. However, the next time I fix it--probably for a breakfast at church--I think I'll reduce the ham to 8 oz rather than a full pound. I thought the ham overwhelmed the taste of the bacon and cheeses. Also, for a supper sidh, I may add some chopped Vidalia sweet onion with the ham and bacon. Anyway, I really do recommend this recipe to anyone with hungry people to feed at brunch.

    Definitely a family favorite! I make a 1/2 recipe in a 9x9 pan. What doesn't get eaten up immediately is pretty good cold and portable for breakfast on the run. I use olive oil instead of butter, skim milk and reduced fat cheese. We like Provolone for one layer and a Colby/Jack mix for the rest. Great for leftover meats, from ham lunchmeat to chopped bratwurst. Mixing dillweed and pepper into the dry Bisquick adds a pop of flavor. Don't bother with the nutmeg. On top of the last layer of cheese, we sometimes use mushrooms and chopped scallions, or tomatoes and parsley....lots of options. Haven't met anyone who doesn't like this!

    So i love this recipe!! i was kind of short on supplies so i substituted a lot of stuff didnt have bacon or ham so i substituted with chopped pork loin that i cooked before hand, i didnt have milk so i just used water and i just used generic pancake mix instead of bisquick and also i added potatoes and only had 5 eggs instead of 8 but it turned out great. cant wait to try it with all the original ingredients
