Potatoes Under Creamy Chicken

Ingredients

Chicken Mixture

1/2
cup milk
1
can (10 3/4 oz) condensed cream of chicken or cream of mushroom soup
1 1/2
cups diced cooked chicken or turkey (1/2 lb)
1
box (9 oz) Green Giant® frozen cut broccoli
1
can (14.5 oz) Muir Glen® organic diced tomatoes, drained

Potatoes

1 1/2
cups hot water
1/2
cup milk
2
tablespoons butter or margarine
1/2
package (7.2-oz size) Betty Crocker® roasted garlic mashed potatoes (1 pouch)

  • 1 In 2-quart saucepan, heat 1/2 cup milk and the soup to boiling, stirring frequently. Stir in chicken and broccoli.
  • 2 Reduce heat; cover and simmer about 5 minutes or until broccoli is tender. Stir in tomatoes.
  • 3 In another 2-quart saucepan, heat hot water, 1/2 cup milk and the butter to a rapid boil. Remove from heat. Stir in 1 pouch Potatoes and Seasoning just until moistened. Let stand about 1 minute or until liquid is absorbed. Whip with fork until smooth. Serve chicken mixture over potatoes.

Lower fat and calories by using fat-free (skim) milk and reduced-fat condensed cream of chicken soup.

For extra flavor and color, sprinkle finely grated Parmesan cheese and chopped fresh basil or parsley over the chicken mixture.

You can make this dish from foods you keep on the shelf or in the freezer. Two 5-ounce cans of chunk chicken can replace the diced cooked chicken.

Instead of tomatoes I included some frozen corn and peas, simply because that is what is in my freezer! I served it with some garlic toast and garlic "Simply Potatoes" mashed potatoes. This dish was great!
