Potato-Topped Turkey and Green Bean Bake

Ingredients

pound lean ground turkey

medium onion, chopped (1/2 cup)
1/2
teaspoon garlic powder
3/4
to 1 teaspoon dried thyme leaves
2/3
cup fat-free (skim) milk
2
packages (9 ounces each) frozen French-style green beans, thawed, drained
1
can (10 3/4 ounces) condensed 98% fat-free cream of mushroom soup
1
can (8 ounces) sliced water chestnuts, drained
1
jar (4 1/2 ounces) Green Giant® sliced mushrooms, drained
1
bag (16 ounces) frozen seasoned potato nuggets

Directions

  • 1 Heat oven to 450°. Spray rectangular baking dish, 13x9x2 inches, with cooking spray.
  • 2 Spray 10-inch nonstick skillet with cooking spray. Cook turkey, onion, garlic powder and thyme in skillet over medium-­high heat until turkey is no longer pink. Stir in milk, green beans, soup, water chestnuts and mushrooms. Heat to boiling. Pour turkey mixture into baking dish. Top with potato nuggets.
  • 3 Bake 20 to 25 minutes or until hot and bubbly. Let stand 5 minutes before serving.

"There are two kinds of people in this world" - those who like water chestnuts, and those who do not! SO I liked this a lot - my fiancé less so. And I do admit, something imparted a different taste, and it might have been the chestnuts. I would make this again, but skip the water chestnuts, and I would ignore the seasonings and amounts given in the ingredients and just do it myself to taste, with whatever strikes my fancy. I like the quantity of vegetables in this, I might replace the water chestnuts with sliced carrots. I did use an 8 oz package of fresh sliced mushrooms instead of the canned - I do not like mushrooms much at all but I find fresh to be far more appetizing. We did not have any sides with this as it has so much in it already!

It was basically just ok. It was similar to my tater tot hotdish with less meat, a lot more beans, and less tater tots. I chose this out of the heart-healthy area, and it definitly looked more healthy than what I normally make. Which is what I wanted. It wasn't bad, just not great.
