Instead of the salsa, I use low sodium peeled and diced tomatoes, sliced canned potatoes will work too. No cheese? mushroom soup. no broccoli use green beans. I use smoked kielbasa.

I found a winner with this one. My husband has requested this over and over since the first time I made it. Also very good with frozen peas instead of broccoli. Quick, easy and very tasty.

I have now made this multiple times and absolutely love it. The only thing I have changed is I use Picante sauce instead of salsa... gives it a creamer sauce.

I made this dish last night for my husband and I. I doubled the recipe just to make sure we had enough. I used one box of regular Au Gratin potatoes and one box of three cheese Au Gratin potatoes and I used fresh broccoli that I blanched before adding to the dish. I must say this was a really good meal that I will certainly make again. I followed the recipe exactly and it was delicious. I am a gourmet cook and usually spend quite a bit of time in the kitchen. It is nice to come across a recipe such as this that is quick, easy and very tasty. After reading some of the reviews, it is a must that you add the salsa. I used Herdez brand "hot" salsa which really added a nice "kick" to the meal. I read a comment about using a chunky salsa because one reviewer said their salsa made the dish too soupy, so I slightly strained my salsa in order to avoid that. The dish came out creamy and very flavorful. I will definitely make this meal again and I recommend it for a quick weeknight dinner.
