Pork Chops with Mixed Dried Fruit

Ingredients

  • 4 pork loin chops, about 3/4 inch thick (about 1 1/4 pounds)
  • 1 package (8 ounces) mixed dried fruit (1 1/2 cups)
  • 3 tablespoons packed brown sugar
  • 3 tablespoons orange marmalade
  • 2 tablespoons cider vinegar
  • 1/2 teaspoon ground ginger
  • 1 can (5 1/2 ounces) apricot nectar
  • 1 tablespoon cornstarch
  • 2 tablespoons water

    Place pork in 3 1/2- or 6-quart slow cooker. Layer dried fruit evenly over pork. Mix brown sugar, marmalade, vinegar, ginger and nectar; pour over pork and fruit.

    Cover and cook on low heat setting 6 to 7 hours or until pork is slightly pink when cut near bone.

    Remove pork and fruit from cooker, using slotted spoon; cover and keep warm.

    Skim fat from pork juices in cooker if desired. Pour juices into 1-quart saucepan. Mix cornstarch and water; stir into juices. Cook on high heat 4 to 6 minutes, stirring constantly, until thickened and bubbly. Serve sauce with pork and fruit.

  • Check that the package of dried fruit contains large pieces of fruit, such as slices of peaches, apples, pears and apricots. Diced dried fruit is also available, but the pieces are so small that they overcook and become part of the sauce during the long, slow cooking.
  • Although apricot nectar enhances the flavors of the dried fruit, feel free to also use 3/4 cup of another light-colored fruit juice, such as apple, orange or pineapple.
  • Parsley-buttered new potatoes and steamed baby carrots are all that is needed to complete this Scandinavian-influenced dish and satisfy everyone at dinner.
