boneless pork loin chops (about 1 pound)

cups chopped onions

cup Progresso® beef broth (from 32 oz carton)
1/8
teaspoon pepper
1/3
cup fat-free (skim) milk
2
tablespoons Gold Medal® all-purpose flour

  • 1 Generously spray 12-­inch nonstick skillet with cooking spray; heat over medium-high heat. Cook pork chops in skillet about 6 minutes, turning once, until brown on both sides. Remove pork from skillet; cover to keep warm.
  • 2 Reduce heat to medium. Add onions to skillet; cook 3 minutes. Stir in broth and pepper. Return pork to skillet; spoon onion mixture over pork. Cover tightly and simmer 12 minutes or until pork is no longer pink and meat thermometer inserted in center reads 160°.
  • 3 Mix milk and flour in small bowl. Add to skillet; cook 2 to 3 minutes, stirring constantly, until thickened.

As I'm always in search of a low cal, low fat "comfort food" type recipe, this one really intrigued me. Hubby's a picky eater, although he does love pork chops. This really foot the bill for both of us! My birdies have all left the nest so not liking to eat the same thing night after night, I halved the recipe. Boy was I dissapointed with that choice. I would have loved to have more of it again today. Hubby loved it and suggested I try it with chicken and chicken broth/gravy. Either way, sounds good to me!!

This was an awesome meal, my husband and my toddlers loved it. I used beef gravy out of the package instead of the beef broth, since i did not have it. I live 2 hours away from the grocery store, so i had to substitute it for something else, but it turned out real good.

This was a very tatty meal! However, it took longer than 30 minute prep time. More around 45-50 minute prep. Bit it was worth the extra few minutes!
