Pork Chop Bake

bag (20 oz) refrigerated cooked shredded hash brown potatoes
1
can (11 oz) condensed Cheddar cheese soup
1/2
cup sour cream
1/2
cup milk
3
cups chopped fresh broccoli florets
1
medium onion, chopped (1/2 cup)
1
tablespoon olive or vegetable oil
6
bone-in pork chops (1/2 inch thick)
1/2
teaspoon salt
1/4
teaspoon pepper

  • 1 Heat oven to 350°F. In large bowl, mix potatoes, soup, sour cream, milk, broccoli and onion. Spoon mixture into ungreased 13x9-inch (3-quart) glass baking dish. Cover with foil; bake 30 minutes.
  • 2 Meanwhile, in 12-inch skillet, heat oil over medium-high heat. Add 3 of the pork chops; sprinkle with half of the salt and pepper. Cook 3 to 5 minutes on each side or until pork is browned. Repeat with remaining pork chops, salt and pepper.
  • 3 Remove foil from baking dish. Place pork chops evenly on top of potatoes, overlapping slightly. Bake 25 to 35 minutes longer or until edges are bubbly and pork is no longer pink in center.

Cooked this last night and we loved it. Not enough cook time for the onions to be done so next time I'm going to fry them alittle before putting them in the potatoes. Was too much cook time in the oven for the pork chops. NEXT time I make it, I will have learned fromthe first time. Delicious meal!!!!

This is really a side dish recipe with pork chops added. It is a meal on it's own and the flavor is okay, nothing special. I put frozen, thawed hash browns on a baking sheet and baked them on convection to get them a little crispy and browned. I used 2 cups of chopped frozen (thawed) broccoli and at leat 1/2 cup onion. Baked it covered for 30 minutes; then another 15 and the onions weren't cooked and all in all it needed more time in the oven. I browned the (2) chops but they sure didn't need 25 to 35 minutes in the oven and they were more than 1/2-inch thick.

Such an easy delicious all-in-one meal! I didn't have the frozen hashbrowns but the Betty Crocker hashbrowns in a box were a super substitute and the onion in the hashbrowns took care of the onions in the recipe. This potato casserole is similar to something I make all the time, this has replaced it. You can serve the potatoes with anything, they are sooo good! Thanks for another winner Betty!
