Dinner ready in 30 minutes! Enjoy this hearty pork recipe made with Green Giant® Niblets® whole kernel sweet corn – a delightful meal.
tablespoons olive oil
small red potatoes (about 1 lb), cut into 1/2-inch cubes
pork tenderloin (about 1 lb), cut into 1/2-inch pieces
jar (12 oz) seasoned gravy for pork
can (7 oz) Green Giant™ Niblets® whole kernel sweet corn, drained
medium green onions with tops, sliced (1/4 cup)
cup chopped fresh parsley
In 12-inch nonstick skillet, heat oil over medium-high heat. Cook potatoes in oil 10 to 12 minutes, stirring frequently, until golden brown. Add pork; cook about 5 minutes, stirring frequently.
Reduce heat to medium. Add remaining ingredients except parsley. Cook 4 to 6 minutes longer, stirring occasionally, until pork is no longer pink in center. Top with parsley.
Making hash is also a great way to use up small amounts of leftover meat (such as roast beef or corned beef) and vegetables (potatoes, onion and bell peppers). Just heat ingredients together in a skillet until lightly browned. Serve with gravy if desired.
