Directions

  • 1 Heat oven to 425°F. Crush cereal. (To easily crush cereal, place in plastic bag or between sheets of waxed paper, and crush with rolling pin.) In large bowl, mix crushed cereal, beef, rice, milk, dry soup mix and egg. Using wet hands, shape mixture into 30 meatballs. Place in ungreased 13x9-inch baking dish or 3-quart casserole.
  • 2 Pour water and tomato juice over meatballs; stir gently.
  • 3 Cover and bake 50 to 55 minutes or until rice is tender and beef is no longer pink in center and juice is clear.

EXPERT TIPS

Expert Tips

Accompany this appetizer with thin slices of toasted French bread to catch the sauce when serving at holiday parties or any time of year.

Evenly shaped meatballs are easy when you pat the meat mixture into the baking dish and cut into 6 rows by 5 rows. Roll the squares into balls and return to the dish to bake.

It makes me so sad to see this website changing, to see the recipes changing to tailor this new lazy America. What happened to family recipes, traditions, simmering meals from scratch? My favorite porcupine ball recipe is from Betty Crocker, just from the 70's. All their recipes are turning south. Porcupine Balls (serves 4-5) 1 beaten egg 1 10 ¾ oz can condensed tomato soup ¼ C long grain rice 2 T long grain rice 2 T finely chopped onion 1 T snipped parsley 1lb ground beef 1 t Worcestershire sauce Combine egg and ¼ C soup. Stir in uncooked rice, onion, parsley, ½ t salt, and 1/8 t pepper. Add beef and mix well. Shape in to 20 small balls, place in 10-inch skillet. Mix in remaining soup with Worcestershire sauce and ½ C water, pour over meatballs. Bring to boil, reduce heat. Cover and simmer 35-40 minutes; stir often.

I forgot to add...I use ground turkey. Also, when the meatballs are ready to go in the oven, I pour tomato sauce over them and I don't use extra water, just the sauce. Makes an easy meal.
