It makes me so sad to see this website changing, to see the recipes changing to tailor this new lazy America. What happened to family recipes, traditions, simmering meals from scratch? My favorite porcupine ball recipe is from Betty Crocker, just from the 70's. All their recipes are turning south. Porcupine Balls (serves 4-5) 1 beaten egg 1 10 ¾ oz can condensed tomato soup ¼ C long grain rice 2 T long grain rice 2 T finely chopped onion 1 T snipped parsley 1lb ground beef 1 t Worcestershire sauce Combine egg and ¼ C soup. Stir in uncooked rice, onion, parsley, ½ t salt, and 1/8 t pepper. Add beef and mix well. Shape in to 20 small balls, place in 10-inch skillet. Mix in remaining soup with Worcestershire sauce and ½ C water, pour over meatballs. Bring to boil, reduce heat. Cover and simmer 35-40 minutes; stir often.

I forgot to add...I use ground turkey. Also, when the meatballs are ready to go in the oven, I pour tomato sauce over them and I don't use extra water, just the sauce. Makes an easy meal.

Growing up, my mother would make this at least once a month. We all loved it. I make it a lot. I double the recipe, use bread crumbs instead of cereal and instead of 30 small meatballs, i make 8 large meatballs, just like mom.

This was a big hit with my family. It is one of my husband's favorites and he said it was as good as his Mother's recipe if not better. I used one cup of bread crumbs instead of the cereal since we live in Europe and do not have that available. I also used tomato sauce instead of the tomato juice and it came out great. Will definitely make it again.

Everybody loved this meal. I double the recipe and freeze for an easy meal later. I used two cans of tomato sauce and 2 cups of water (makes 4 cps for the doubled recipe) instead of tomato juice.

I made these for a party and everyone raved about them! The only thing that I did differently was to puree some chilis in adobo sauce and add that to the sauce. It added a spicy kick. The left overs were excellent served over mashed potatoes. The next time I make them as appetizers I''m going to make 40/45 meatballs instead of 30 so that they are smaller and more bite-sized.
