Bake potatoes and beef sprinkled with taco-seasoned cheese and tortilla chips to make delicious casserole dinner for five.

Ingredients

pound ground beef
1
jar or can (14 to 15 ounces) pizza sauce
2
eggs
1
cup milk
1
tablespoon vegetable oil
1
cup Gold Medal® all-purpose flour
1/2
teaspoon salt
2
cups shredded Cheddar cheese (8 ounces)
2
medium green onions, chopped (2 tablespoons), if desired

Directions

  • 1 Heat oven to 425°.
  • 2 Cook beef in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown; drain. Stir in pizza sauce. Heat to boiling; reduce heat to low and keep warm.
  • 3 Beat eggs, milk, oil, flour and salt with wire whisk until foamy. Spoon beef mixture into ungreased rectangular baking dish, 13x9x2 inches. Sprinkle with cheese. Pour egg mixture over cheese. Sprinkle with onions.
  • 4 Bake uncovered 25 to 30 minutes or until puffy and golden brown. Serve immediately.

The entire green onion, both white and green parts, is edible. The white portion of a green onion has a slightly stronger flavor than the green stems.

This was a delicious casserole and affords all sorts of opportunities for customization with typical pizza toppings. The popover topping is a perfect contrast to the ground meat and Italian sauce.

Easy and quick to make. The family loved it. I added part ground beef and part pork sausage and a drained 4oz can of mushrooms. Yum!!
