Polka-Dotted Salmon Loaf

Stretch that food dollar. You just need one can of salmon in this hearty and flavorful "meatloaf."

Ingredients

cups Betty Crocker™ Potato Buds™ mashed potatoes (dry)

cup shredded Cheddar cheese (4 ounces)
1
cup milk
1
tablespoon lemon juice
1/2
teaspoon salt
1/4
teaspoon pepper
4
medium green onions, chopped (1/4 cup)
1
can (14 3/4 ounces) salmon, drained and flaked
1
can (10 3/4 ounces) condensed cream of mushroom soup
1
package (10 ounces) frozen green peas, partially thawed

slices process American cheese

Directions

  • 1 Heat oven to 350ºF. Grease square pan, 8x8x2 inches.
  • 2 Stir together all ingredients except cheese slices. Spread mixture in pan. Top with cheese slices.
  • 3 Bake 25 minutes. Cool 5 minutes before serving.

Expert Tips

Make a pretty presentation by leaning thin slices of this loaf beside a mound of garlic mashed potatoes. Drizzle with gravy, and sprinkle with fresh chives and chive blossoms.

Add extra zip to this yummy salmon loaf when you replace the shredded Cheddar with a pizza blend or taco blend of shredded cheese.
