Ingredients

cups Water
2
cups dried pinto or black beans (1 pound)
1
medium onion, chopped (1/2 cup)
1/4
cup vegetable oil
1
teaspoon salt
1
teaspoon cumin seed
2
cloves garlic, crushed
1
slice bacon, cut up

Directions

  • 1 Mix water, beans and onion in Dutch oven. Cover and heat to boiling. Boil 2 minutes; remove from heat. Let stand 1 hour.
  • 2 Add just enough water to beans to cover. Stir in remaining ingredients. Heat to boiling; reduce heat to low. Cover and simmer about 2 hours, stirring occasionally and adding water if necessary, until beans are very tender, drain. Beans can be covered and refrigerated up to 10 days.
