I have made these cupcakes several times and always get rave reviews. People LOVE them and always want the recipe. I just sent the link again to another friend today. For individuals who didn't care for the recipe, maybe it was the type of champagne used? I always use a brut and am sure the different types of champagne could really change the taste. I even made them blue for a baby shower! I LOVE THESE CUPCAKES!!

Not going to lie...nobody really cared for them. No, I didn't mess up the recipe. They just tasted like left over skunky champagne. It was a huge bummer since I had such high hopes for them!

Made these for my best girlfriends 60th birthday. They were light, tasty, quick and very easy to make. I used strawberry champagne and added about 1/2 tsp vanilla. I used a touch of the red food coloring, but with the pink color of the champagne I probably didn't need to. With a regular box of cake mix it only makes about 18 regular size cupcakes. Not 24. I also used another reviewers frosting recipe with cream cheese, also using champagne. Not too overly sweet and very light and creamy. The response from everyone was "Yum - when are you going to make more?" I think it almost made up for the horrible hard-as-a-brick red velvet cake I attempted to make probably 20 years ago which she has never let me forget! A bottle of champagne will easily make 2 batches with frosting, but I'm afraid the baker sampled what was left of this bottle.

Used 1/2 cup (1 stick) of softened butter in the batter instead of the oil. Much richer taste.

I fell in love with Pink Champagne Cake many years ago. The only place we could get it was at one restaurant in Scottsdale until they went out of business. I tried several tiems searching for a recipe to no avail. Thank you so much for giving a recipe both for the cake and cupcakes. I cannot wait o take them to work. I know there will plenty of raves. Thank you for a great big bit of nostalgia

There is a tiny, incredible bakery near me that makes Pink Champagne cupcakes but at $3.50 apiece...wow!, I can only afford one per week and certainly NOT afford any to give away. As soon as I saw this recipe for them, I hauled out the baking pans and made my OWN!!! They taste identical to the bakeries and I am beyond happy! Now, for those of you that like cream cheese frosting, I have the recipe for the frosting that both the bakery uses and I used on my cupcakes. My family does NOT like tons of frosting so this amount is fine by us, but if you like tons of frosting, just double the amounts. :) Pink Champagne Cream Cheese Frosting: 1 -8oz packages Cream Cheese 1/2 Stick Butter 2 1/2--3 Cups Powdered Sugar 1/8 to 1/4 Champagne or Spumante In medium bowl, beat frosting ingredients with electric mixer on medium speed until smooth.

Has anyone tried adding a little bit of champagne & food coloring to regular vanilla frosting (enough to achive the champagne taste but not make it too soft) instead?

of all the cupcakes i've made, this one by far is the number 1 i get requests for. I do add a little more champagne to the frosting to make it a little bit creamier, but overall, its a hit of all the parties and work related functions

These were very moist and tasty, but I wasn't sold on the frosting. It tasted like a sweet stick of butter to me (the frosting tasted better after frosting the cupcakes and having them in the fridge a couple of hours). Next time I make these, I will only use half the amount of butter. Otherwise, the champagne flavor was very delicate.
