These are super easy to make and delicious. They were a big hit with my daughter's girl scout troop and the parents. I will definitely make again. I added extra champagne to the icing for more flavor and consistency and it turned out fine....not runny at all.

Too much liquid for the icing. Use less liquid and it will be fine.

I use this recipe and made it into a cake in 2010 when I first received the recipe. It turned out fantastic. Everyone in the house loved it.

I made these cupcakes for my birthday party. I bought a pink moscato by Barefoot Bubbly. I think the overall cupcake is very good, although next time I will probably cut back the sugar in the frosting. I just whipped all the ingredients at once - next time I will add the sugar in 1/2 cup at a time and stop when I like it. The frosting is just a little too sugary. Although at least one guest told me the frosting was the best part, for my personal taste, I would like less sugar.

This is my go-to cupcake recipe. It's fast and easy, the only adjustment I make is using applesauce instead of oil. Whether using champagne or substituting ginger ale, they're always moist and fluffy. It's also easy to just change the food coloring or use a different extract to suit your dessert needs. It's definitely a crowd pleaser!

I made these with whatever champagne was cheapest, because it was and kid/adult party I also made purple ones with lemon/lime soda instead of the champagne they were great, I made purple champagne frosting for the pink ones and pink soda frosting for the purple ones it was really cute for our pink and purple going away party.
