Pineapple Upside-Down Bundt Cake

Ingredients

tablespoons butter, melted
1/4
cup packed brown sugar

pineapple slices (from 20-oz can), drained reserving juice
6
maraschino cherries
1
box Betty Crocker® SuperMoist® yellow cake mix
1
cup reserved pineapple juice (from can of pineapple)
1/2
cup vegetable oil
3
eggs

Directions

  • 1 Heat oven to 350°F. In 12-cup fluted tube (bundt) cake pan, pour melted butter. Sprinkle brown sugar evenly over butter. Line bottom of pan with pineapple slices. Place 1 cherry to center of each pineapple slice.
  • 2 In large bowl, beat cake mix, pineapple juice, oil and eggs with electric mixer on low speed until moistened; beat 2 minutes on high speed. Pour into pan over fruit.
  • 3 Bake 40 to 45 minutes or until cake is golden brown and springs back when touch lightly. Cool cake in pan 10 to 15 minutes. Plate heatproof plate upside down over pan; turn plate and pan over. Remove pan. Serve warm or cool.

Excellent recipe! I bought a Pineapple upside-down cake mix by another brand a while back and was surprised that they never told me how to add the pineapple/cherries & brown sugar for the bottom/top!-- and the box proudly shows how the finished cake is supposed to look....OOPSIE! The box is still in the pantry since I refuse to make a "failed cake"! This recipe I wonderful, and my husband, being a Pineapple upside-down "junkie" just loves this one. I've tried another off the 'Net and was horrified when it came time to flip it over and it came out a sloppy mess-after following the recipe to the letter. I've probably made 50 such cakes and this one is most definitely #1,

I made this Cake for our christmas party this year and it was delicious. The only thing I did different was that I moistened it after it was cooled off with a cup of 100% pineapple juice. I like my cake extra moist.
