Great recipe! I cooked the pudding thick(I added a little extra pudding), then added coconut extract and rum extract. Add the extracts to your taste. After each pineapple layer, I sprinkled toasted coconut. I had to make a second one, because my family ate it all!

Had this for my niece's birthday tonight. Everyone thought it was delicious and it does make a nice, light tasting, cool summer dessert. Mine stayed formed after removing the springform pan, but begin to fall apart as we cut it leaving the leftovers in a messy pile. I think I might use pineapple tidbits and put in a trifle bowl next time. BTW, I used the pineapple in heavy syrup as I think it generally has more taste than the in 100% juice kind.

This was so good we forgot to put the whipping cream on top. You have to make sure to heat the pudding ingredients until it thicken before putting in springform pan came out perfect. Only change my daughter suggested adding vodka but we had kids eating it so I couldn't.

Perfect for a summer evening dessert! My family loved the light, delicate flavor! I decided to put this recipe together in a trifle bowl instead of the springform pan, and I think it presented a much nicer visual.... I also got 5 layers of goodness! Will definitely make it again, but next time will use the instant pudding mix and have less wait time before digging in!

I also made this recipe for dinner guest. Terrible! Absolutely no taste and it didn't stay formed after releasing from springform pan. Will not make again!

Was not totally thrilled with this recipe. If I was to make this again I would change the pineapple slices to either the chucks or tibits or crushed pineapple and would add more. Felt it lacked flavor in the pineapple taste.
