I have baked a very similar loaf, but with a more Hawaiian twist - I used dried pineapple pieces cut into small chunks instead of the canned and macadamia nuts, also cut into pieces. It is a to-die-for loaf. Can also be used with a butter pound cake recipe.

I made this cake for a luau party for my daughter, EVERYONE loved it and I have been asked for it again. The only thing I altered was the powdered sugar and pineapple juice... I used all the juice and adjusted the powdered sugar acordingly. We did not refergerate it we just served it at room temperature!!! It was summer time and so yummy!!!

My friends absolutely love this cake. I agree, it is much better kept cool. I also frosted it with buttercream frosting mixed with coconut and coconut extra. It seemed to help with a even distribution of the flavors.

I followed every step, but next time I will add more coconut. Although the cake tasted more like pineapple, it still tasted delicious. I refrigerated it also, and everyone agreed it was better cold.

I've made this a couple of times for a friend's birthday. She and I both really love it. At her request I've made it with a buttercream frosting and it turned out quite nicely. I prefer the original, only I use at least twice the drizzle they suggest and pour it on a sliced piece for extra sweetness. This cake absolutely needs to be refrigerated, though, it goes bad quickly if left out.

Didn't have rum so I used vanilla. It was OK but next time I will make sure I have rum. Pina Colada without rum is a very sad thing!
