Summer has arrived with this dessert! I made as shown in the recipe except ended up using more coconut on top. These smell amazing while baking -- and taste even better when done. Made today's batch for my husband's birthday tomorrow & will certainly make again!

Delicious!! I Added extra pineapple like others had suggested and put a little coconut in the batter.. I didn't have coconut extract so I used a little Malibu :) I will make these again for sure!!

These Cupcakes are Delicious and so easy to make!!! I doubled the amount of pineapple to put in because I love pineapple and adding a second can you can taste more of the pineapple! These really area Great and always a Big Hit!!!

These were pretty good, but not as good as expected. You have to put extra rum and almond if you want to be able to taste it in the cupcake after you bake the cupcake. The batter was VERY flavourful before baking, but afterwords nothing really special than a normal cupcake. Still enjoyed it though.

I made these for Memorial Day and for a work function. Instead if the rum extract and coconut extract I added a coconut rum to the batter. I added a small amount of cocunt extract and more coconut rum to te frostin with a little powdered sugar so it wasn't too soft. I eliminated the shredded coconut and instead garnished it with a pineapple chunk and maraschino cherry pierced with a drink umbrella. Super cute and very yummy!

I made them for work (a Resort Hotel in Orlando) and what a hugh hit. Very easy and moist--maybe more pineapple would be nice. They were a hugh hit with everyone-plus they suited the evert I took them too--Florida fun & sun..Will make them up again soon.
