These were AMAZING my family loved them!!! I did omit the rum extracy fromt he frosting and toasted the coccnut. The toasted cocnut made it!!!

I took these to a family reunion, yesterday and they were the hit of the party and super easy to make. I made the cupcakes the night before and frosted them there to make for easier transportation.

I made these for Memorial Day and a girls night and I think I only had one of each batch because i didnt get to the pan fast enough. HAHA... Although I asked my brother who is a chef what he thought and he said if i had toasted the coconut on top it would have brought the flavor out a little more.

I made these (non-alcoholic) for a Vegas themed birthday party I threw and they were a huge hit. Not overly sweet, but sweet enough and super easy to make. I will certainly make them again.

Summer has arrived with this dessert! I made as shown in the recipe except ended up using more coconut on top. These smell amazing while baking -- and taste even better when done. Made today's batch for my husband's birthday tomorrow & will certainly make again!

Delicious!! I Added extra pineapple like others had suggested and put a little coconut in the batter.. I didn't have coconut extract so I used a little Malibu :) I will make these again for sure!!

These Cupcakes are Delicious and so easy to make!!! I doubled the amount of pineapple to put in because I love pineapple and adding a second can you can taste more of the pineapple! These really area Great and always a Big Hit!!!

These were pretty good, but not as good as expected. You have to put extra rum and almond if you want to be able to taste it in the cupcake after you bake the cupcake. The batter was VERY flavourful before baking, but afterwords nothing really special than a normal cupcake. Still enjoyed it though.
