I wish I had seen this updated recipe before baking one from the original recipe, which calls for 1 1/4 cups water in the cake (thought it looked runny) and a frosting powder mix (which is no longer available). It was my Mom's favorite cake and this is the first time I've made it since she passed away

When this recipe first came out YEARS ago, I'm sure it called for frosting the cake with Cool Whip and keeping it refrigerated. Made a very cool, moist dessert! Didn't find anyone that didn't love it.

We had a family reunion today...and really needed a dessert, bacause my mom made a delicious pozole..one of my favorite meals...so, I made this cake today...I had to tell you that piña colada is my favorite drink..and was a very useful idea to try this cake..And SUCCESS!!! everyone like it a lot...and someone also thougth that I bought the cake already made...!!!! they didn't beleive I made it...!!!I didn't use the rum extract because I didn't found it. thanks a lot for the recipe!

I did this recipe for the 4th of july and everybody loved it, including those that don't usually eat dessert (they even went for seconds!). I did some changes to the recipe thou. I eliminate the rum extract and substitute 3/4 water for 1/4 rum, 1/4 coconut syrup for piña colada mix and 1/4 water, and I added about 2 tablespoons of rum and 1 or 2 teaspoons of coconut syrup to the frosting instead of the rum extract. I also added apricot pineapple mermelade (couldn't find pineapple mermelade but the apricot gave it a really delicious twist) to the frosting that went between the cake layers. Mmmmmm.... it was hard to have only one piece.
