Picnic Chicken Loaf

The tang of a Granny Smith apple, the creaminess of French brie--put them together with rotisserie chicken from the deli for a great sandwich in a snap.

I made this to take an outdoor concert and it traveled well. It has such great flavors and the crunch of the apple is wonderful. Make sure you get a mild brie though, because the brie I purchased was a little strong for some people. I did use Deli sliced roast chicken instead of the rotisserie chicken. My boyfriend loved it though so that's really all that matters!! *grin*
