cup White Satin Cooking Wine
  1. Cut up Northern into bit size pieces. (Leave the bones in)
  2. Soak in saltwater 72 hours (4 cups water/1 cup salt)
  3. Wash with cold water. Cover with wite vinegar and soak 72 hours. Drain fish and put fish and sliced onions in quart jars.
  4. Make the brine. Combine 1 cup water, 2 cups white vinegar, white sugar, pickling spice, cooking wine. Simmer for 5 minutes. Remove from heat and allow to cool.
  5. Pour brine into the quart jars.
  6. Refrigerate for 7 days.
  7. Eat.
