Philly Cheese and Ground Beef Casserole

Ingredients

lb lean (at least 80%) ground beef
1
package (8 oz) sliced mushrooms
1
teaspoon salt
1/2
teaspoon pepper
8
slices (1 oz each) provolone cheese
2
tablespoons butter or margarine
2
large onions, halved and thinly sliced into wedges
2
medium red bell peppers, cut into strips
2
cloves garlic, finely chopped
1
can (16.3 oz) Pillsbury® Grands!® Homestyle original biscuits

Directions

  • 1 Heat oven to 350°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • 2 In 12-inch skillet, cook beef, mushrooms, salt and pepper over medium-high heat 7 to 9 minutes, stirring frequently, until beef is thoroughly cooked; drain. Place in baking dish. Arrange cheese over beef mixture, overlapping slices if needed.
  • 3 In same skillet, melt butter over medium-high heat. Add onions and bell peppers. Cook over medium-high heat 3 to 5 minutes, stirring frequently, until peppers are crisp-tender. Stir in garlic; cook 1 to 2 minutes longer. Spoon over cheese in baking dish.
  • 4 Separate dough into 8 biscuits. On lightly floured surface, pat biscuits into 5-inch circles. Arrange biscuits over vegetable mixture.
  • 5 Bake 35 to 40 minutes or until biscuits are golden brown on top.

To easily cut peppers, cut a thin slice off bottom of pepper. Set pepper on cutting board, cut side down. Cut strips of pepper from stem down to board, cutting just the flesh and leaving seeds and core attached to stem.

I love this recipe. I try to overlook the sodium content but I just make adjustments for the rest of the day when I know I am going to have this. I made it with the ground beef and I liked it, but the second time I made it I had a sirloin tip roast that I shredded and used it. ALSO very good!! It does well as a make ahead meal if you cover it tightly, OR you can put the biscuits on it before you bake it. It also freezes quite well after being cooked. I love the versatility here, but you really aren't going to want to change much at all....thank you.

We thought this was pretty darn good! Left out the mushrooms and added several cloves of minced garlic to the ground beef while cooking it. I contemplated adding cream of mushroom soup or some ketchup to the ground beef, but decided not to in the end. Other than that, I followed the recipe as is. It was plenty cheesy for us, but hey, if you want more, add some more! My only complaint about this dish is that it doesn't reheat well... Not in the microwave anyway!

this message is for lindykay. you have to add seasoning for the dish to taste great that is all. you cant just put salt and pepper you need more seasoning and the dish comes out fantatstic. try putting in some garlic powder, sazon, onion powder and some salt and pepper. just like any food. if you dont season it it wont taste good.
