Pesto Turkey and Pasta

Ingredients

cups uncooked farfalle (bow-tie) pasta (6 ounces)
2
cups cubed cooked turkey breasts
1/2
cup basil pesto
1/2
cup coarsely chopped roasted red bell peppers
Sliced ripe olives, if desired

Directions

  • 1 Cook and drain pasta as directed on package in 3-quart saucepan.
  • 2 Mix hot cooked pasta, turkey, pesto and bell peppers in same saucepan. Heat over low heat, stirring constantly, until hot.
  • 3 Garnish with olives.

Super easy to make up, even for a beginner. I did use chicken instead of turkey, but it still tasted great. I even used a basil pesto recipe from this site instead of buying it.

This dish is also wonderful with country sausage and canned diced tomatoes instead of turkey and roasted peppers. I usually make garlic bread with it which compliments it very well. It is my husband's favorite and one the entire family enjoys! Tip: You can also buy pesto packets in the spices isle of your grocery store and follow the directions. It is much cheaper than purchasing canned pesto and takes up less room in the pantry.
