Pesto-Chicken Sandwiches

Ingredients

package (10 ounces) ready-to-serve Italian pizza crusts (7 inches in diameter)
1
tablespoon olive or vegetable oil
1
medium celery stalk, chopped (1/2 cup)
1
cup cut-up cooked chicken
1/3
cup basil pesto
2
tablespoons freshly grated Parmesan cheese
1/2
cup shredded lettuce

  • 1 Heat pizza crusts as directed on package if desired.
  • 2 Meanwhile, heat oil in 10-inch skillet over medium-high heat. Cook celery in oil 4 to 5 minutes, stirring occasionally, until crisp-tender; reduce heat. Stir in chicken and pesto. Cook, stirring occasionally, until hot.
  • 3 Spoon chicken mixture onto pizza crusts. Mix cheese and lettuce; sprinkle over chicken mixture. Cut each pizza crust in half.

The picture appears to be for some other recipe. Looks like yellow bell peppers (not in the recipe) and I don't see any lettuce.

These were soooo good, but, I made a few modifications. I friend both celery AND onion together, and added pesto to taste ( i think i used more than was recommended in the recipe). I mixed the lettuce with oil AND parmesan. Also, I used garlic naan bread instead of pizza crusts - i know, it sounds weird, but it all worked out really well. It tasted great, and was extremely filling! Delicious!

I made this recipe using pita pockets instead of pizza crust, and it tasted great. The pita made it easier to carry to work with me for lunch. Also, there are brands of pre-cooked grilled chicken strips at the grocery store, which saved tons of time and were very inexpensive.
