Made these for dinner tonight and everybody LOVED them! They were quick and easy to make. I paired them with Betty's Spicy Corn Fritters. OMG! A wonderful combination! Daughters wanted leftovers, but they ate them all tonight!! These will definitely be a regular in our house.

This is an excellent recipe! It pairs very nicely with fried plantains and/or corn! My family loved it. My daughter even ate the peppers. Great for a weeknight meal.

This was definitely fantastic and quick! If you don't have a jar of roasted peppers, you could actually take a pepper and roast it yourself. I tried that, too. This was super tasty, and it hit the spot. Definitely try this!

When I saw this recipe in my Betty Crocker Quick N Easy cookbook, I was skeptical. It didn''t "sound" good to me.Boy was I surprised. This receipe is FANTASTIC! My entire family inhaled it and went back for more. Depending on the size of your family, I would definitely double the recipe.The flavors of the spread, pork and roasted red peppers complimented each other so well.The only thing I changed was I added a small amount of salt to the pork while it was cooking. I served it alongside grilled corn on the cob.
