Penne with Radicchio

Ingredients

  • 4 cups uncooked penne pasta (14 ounces)
  • 2 tablespoons olive or vegetable oil
  • 2 tablespoons margarine or butter
  • 1 medium onion, thinly sliced
  • 1 head radicchio, cut into 1/4-inch strips
  • 1/2 cup dry white wine or vegetable broth
  • 1 cup half-and-half
  • 1/2 teaspoon pepper
  • 1/4 cup freshly grated Parmesan cheese

    Cook and drain pasta as directed on package.

    While pasta is cooking, heat oil and margarine in 10-inch skillet over medium-high heat. Cook onion in oil mixture, stirring occasionally until tender. Stir in radicchio; cook until tender. Stir in wine; cook uncovered until liquid has evaporated.

    Stir in half-and-half and pepper. Heat to boiling; reduce heat. Simmer uncovered about 10 minutes, stirring frequently, until slightly thickened.

    Mix pasta and radicchio mixture. Sprinkle with cheese.

  • The key flavor ingredient in this rich dish is the radicchio, a slightly bitter, red-leafed Italian chicory. If radicchio isn't available in your supermarket, use 1 cup of 1/4-inch strips of red cabbage.
