Pecan Pie Cobbler

Pastries of Pillsbury® refrigerated pie crusts separated by pecans, sugar and corn syrup mixture turn into a delicious pie cobbler – perfect for baked dessert.

Ingredients

box Pillsbury® refrigerated pie crusts, softened as directed on box
2
1/2 cups light corn syrup
2
1/2 cups packed brown sugar
1/2 cup butter, melted
4 1/2
teaspoons vanilla
6
eggs, slightly beaten
2
cups coarsely chopped pecans
Butter-flavor cooking spray
2
cups pecan halves
Vanilla ice cream, if desired

  • 1 Heat oven to 425°F. Grease 13x9- inch (3-quart) glass baking dish with shortening or cooking spray. Remove 1 pie crust from pouch; unroll on work surface. Roll into 13x9-inch rectangle; trim sides to fit baking dish. Place crust in dish.
  • 2 In large bowl, stir corn syrup, brown sugar, butter, vanilla and eggs with wire whisk. Stir in chopped pecans. Spoon half of filling into pastry-lined dish. Remove second pie crust from pouch; unroll on work surface. Roll into 13x9-inch rectangle; trim sides to fit baking dish. Place crust over filling. Spray crust with cooking spray.
  • 3 Bake 14 to 16 minutes or until browned. Reduce oven temperature to 350°F.
  • 4 Carefully spoon remaining filling over baked pastry; arrange pecan halves on top in decorative fashion. Bake 30 minutes longer or until set. Cool 20 minutes on cooling rack. Serve warm cobbler with vanilla ice cream.

The way the recipe is displayed it is a little confusing with the measurements. The cobbler was amazing!!! Will be making it again.

After 2 tries, because I would not give up, I realized it is the way this recipe is printed. It should say 2 1/2 cups brown sugar - not 2 half cups like it looks like, etc. It should say 2 1/2 cups light corn syrup also. This is very expensive to make and I certainly see why you could have easily read this to read 1/2 cup brown sugar or 1/2 cup corn syrup. Made the correct way - it was delicious.

Tried it, not so good - way too dry, mine was not gooey at all and I followed the recipe exactly. Not sure how to improve. The mixture looked and tasted so good, but completely dried out when cooked. Not worth the amount of money I spent to those expensive pecans! Threw it out.
