Pear Salad with Creamy Vinaigrette

Ingredients

Vinaigrette

  • 3 tablespoons olive oil
  • 2 tablespoons chopped fresh basil leaves
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon mayonnaise or salad dressing
  • 1 teaspoon finely chopped onion
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Salad

  • 6 cups mixed baby greens
  • 1 medium pear, thinly sliced
  • 1/3 cup fontina cheese, diced

Steps

    In small bowl, mix vinaigrette ingredients with wire whisk.

    Divide salad ingredients among 4 salad plates. Drizzle with vinaigrette.

  • Serve this salad topped with shredded rotisserie chicken to make it a complete meal.
  • Make the vinaigrette a day ahead, and store it in the refrigerator until needed.
